Our garden grown tomatoes have been delicious this year – so much sweeter and thinner skinned than last. But what a glut ! As it comes to the end of the tomato season it’s time to preserve some with a few of our chillies for good measure – a real winter warmer !
Ingredients (makes approx 3 jars) –
600g Demerara Sugar
800ml Malt Vinegar
4 Cloves Garlic
4 Chillies (or to your personal preference)
Dice and mix all the ingredients in a large pan. Bring to the boil, reduce and simmer for 2hrs or until the mixture thickens. Pour into sterilised jars, seal, label and date. Leave for 3 months to mature.
